APPLE AND CINAMMON BAKE

Apple & Cinnamon Bake

Ingredients
  

  • 60 g uncooked quinoa
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp mixed spice
  • 1 apple, peeled & diced
  • 40 g Raisins
  • 2 eggs
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 150 g almond milk
  • 30 g almonds, sliced

Method
 

  1. Preheat oven 180/160fan/gas mark 4l grease an 8x8 dish.
  2. Add the quinoa and spices into a small bowl and mix well, place into the prepared baking dish.
  3. Sprinkle the apple and raisins over the top of the quinoa.
  4. Beat the eggs, almond milk, vanilla extract and maple syrup together then pour into the baking dish, stir lighty.
  5. Sprinkle the almonds over the top.
  6. Bake for an hour in the middle of the oven until it is mostly set. Allow to cool and cut into squares.
