Tasty Peanut Noodles

Ingredients
  

  • 3 smooth peanut butter
  • 2 Tamari
  • 1 Maple syrup
  • 2 Sesame oil
  • 3 spring onions chopped
  • 1 Garlic clove crushed
  • 2 stock (chicken or vegetable)
  • 1/2 Apple cider vinegar
  • A thump sized piece of ginger grated
  • Salt and pepper
  • 140 g noodles (vegetable or gluten free of your choice )

Method
 

  1. To make the sauce, add the peanut butter, tamari, maple syrup, ginger, garlic, stock, vinegar and sesame oil into a small bowl and mix throroughly.
  2. Cook the noodles according to the packet instructions and drain well or gently heat the vegetable noodles (if using) in a large saucepan.
  3. Add the peanut sauce to the pan and gently heat through for 2 minutes, add the spring onion and stir through for another minute. Place into your serving dish and sprinkle the sesame seeds over ther top and eat immediately.
  4. Serves 2
  5. This recipe also works well with almond butter.
