Avocado Chocolate Mousse

Ingredients
  

  • 1 Very ripe avocado cut into quarters
  • 1 tin Coconut milk chilled in the fridge for at least 3 hours - preferably overnight
  • 30 g Unsweetened cocoa powder
  • 4 tbsp Maple syrup
  • 1 tbsp Coconut oil
  • 1 tsp vanilla extract

Method
 

  1. Place the avocado, cocoa powder, maple syrup, coconut oil and vanilla extract into the food processor and process until smooth.
  2. Take the top (solid) portion from the tin of coconut milk (coconut cream) and place into a bowl. This will leave you with the liquid coconut water for another recipe.
  3. Take your hand mixer and beat the coconut cream for 5 minutes until fluffy (if your coconut cream doesn't fluff up place it into your freezer for 5 minutes to cool down)
  4. Fold the chocolate mixture carefully into the coconut cream until fully combined.
  5. Serve and enjoy
