Pumpkin & Red Lentil Soup

Ingredients
  

  • 2 tsp olive oil
  • 1 medium onion chopped
  • 2 cloves of garlic chopped
  • 450g pumpkin cubed
  • 200g red lentils dried
  • 1 litre water
  • 1 tsp ground ginger
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • salt & pepper to taste

Method
 

  1. Heat oil in large saucepan over medium-high heat
  2. Add the onion, cook for 5 to 6 minutes
  3. Add the garlic cook for 1 minute
  4. Add pumpkin, lentils, ginger, cayenne pepper, cumin and water, bring to boil
  5. Reduce heat, cover the pan and simmer, for 20 to 25 minutes, or until pumpkin is soft and remove from heat
  6. Use an immersion blender or food processor and blend until smooth
  7. Return saucepan to the heat. Season with cayenne, salt, and pepper to taste. Keep stirring constantly, until soup is hot.
