Method
- Heat oil in large saucepan over medium-high heat
- Add the onion, cook for 5 to 6 minutes
- Add the garlic cook for 1 minute
- Add pumpkin, lentils, ginger, cayenne pepper, cumin and water, bring to boil
- Reduce heat, cover the pan and simmer, for 20 to 25 minutes, or until pumpkin is soft and remove from heat
- Use an immersion blender or food processor and blend until smooth
- Return saucepan to the heat. Season with cayenne, salt, and pepper to taste. Keep stirring constantly, until soup is hot.
