Peanut butter granola bars

Ingredients
  

  • 180 g gluten free oats
  • 80 g almonds (crushed)
  • 30 g sunflower seeds
  • 20 g desiccated coconut
  • 3 1/2 tbsp peanut butter
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil
  • 2-3 tbsp dried fruit

Method
 

  1. Pre-heat the oven to 180/160/gas mark 4. Line an 8x8 baking sheet.
  2. Line a baking tray with a silicone baking mat, spread out the oats, almonds and sunflower seeds over the tray. Bake for 5-7 minutes then add the coconut to the tray. Bake for 3-4 minutes until lightly brown.
  3. In a medium bowl, add the coconut oil, peanut butter and maple syrup. Melt in the microwave for 90 seconds, stir well. Add the oat mixture and dried fruit into the bowl with the peanut butter and mix well.
  4. Add the mixture into the prepared baking tray and press down firmly. Place the tray back into the oven and bake for 10 minutes.
  5. Remove from the oven and allow to cool slightly. Cut into bars whilst still warm - the bars can be quite crumbly around the edges.
