Cinnamon Blondies

Ingredients
  

  • 1 tin chickpeas
  • 3 tbsp Coconut butter melted
  • 1.5 tbsp oats (gluten free if needed)
  • 1 apple grated
  • 1 tbsp honey
  • 1 tbsp ground cinnamon
  • 1 tbsp vanilla extract
  • 1 tbsp baking powder
  • Pinch of salt

Method
 

  1. Preheat oven to 180/160/gas mark 4 and line a 8x8 baking tray with parchment paper.
  2. Add all of the ingredients to a food processor and pulse until .
  3. smoothTransfer mixture into the prepared baking tray and spread out evenly.
  4. Bake for around 20 minutes until the top begins to brown and the sides pull away from the edge of the baking tray. The blondies will firm up when they have cooled slightly.
